Current Trends of Enterococci in Dairy Products: A Comprehensive Review of Their Multiple Roles

Summary: Enterococci are a genus well adapted to the cheese environment, capable of impacting cheese flavor, texture, and microbiota due to their antimicrobial activity and genetic exchange. While they offer potential beneficial effects to hosts, concerns arise from their propensity to acquire virulence and antibiotic resistance genes, as well as their opportunistic nature. Further research is needed to distinguish between beneficial and harmful strains in order to fully utilize their potential in artisanal cheeses.
