Effect of high carbon dioxide treatment on reactive oxygen species accumulation and antioxidant capacity in fresh-cut pear fruit during storage

Summary: This study demonstrated that 10% CO2 treatment effectively inhibited the accumulation of reactive oxygen species in fresh-cut pears, enhanced non-enzymatic antioxidant properties, and increased the activities and genes expression levels of antioxidant enzymes, ultimately reducing oxidative damage and preserving the storage quality of fresh-cut pears.
