Enzymatic Interesterification of Palm Stearin and Palm Olein Blend Catalyzed by sn-1,3-Specific Lipase: Interesterification Degree, Acyl Migration, and Physical Properties

Summary: Interesterification of a blend of palm stearin (PST) and palm olein (POL) using chemical and enzymatic methods showed different effects on the solid fat content. Varying blend ratios resulted in different degrees of interesterification. The study highlighted the significance of the outcomes for establishing theoretical basis for a controlled positional-specific interesterification process catalyzed by sn-1,3-specific lipase.
