Summary: The study focused on desorption isotherms, drying characteristics, and rehydration properties of crab stick by-product. Results showed that higher drying temperatures contributed to increased moisture diffusivity and rehydration performance. The best-fitting models for describing desorption and rehydration data were proposed in the research.
