Tartary buckwheat protein hydrolysates enhance the salt tolerance of the soy sauce fermentation yeast Zygosaccharomyces rouxii

Summary: The supplementation of Tartary buckwheat protein hydrolysates with a molecular weight of 1-300 kDa significantly improved the salt tolerance of soy sauce aroma-producing yeast Z. rouxii by promoting cell growth and fermentation. The HM-2 fraction aided in K+ accumulation, cytosolic Na+ removal, glycerol accumulation, cell membrane integrity, mitochondrial membrane improvement, and decreased intracellular ROS accumulation.

Encapsulation of fish oil by carrageenan and gum tragacanth as wall materials and its application to the enrichment of chicken nuggets

Effects of nano-chitosan coatings incorporating with free /nano-encapsulated cumin (Cuminum cyminum L.) essential oil on quality characteristics of sardine fillet

Summary: This study prepared a new degradable coating with nano-encapsulated Cumino cyminum L. essential oil to evaluate the microbial, chemical, and sensory properties of sardine fillet samples. Encapsulation of the essential oil in nanochitosan coatings effectively inhibited microbial growth and chemical spoilage. The coatings with smaller nanoliposome size and higher encapsulation efficiency showed the best results in preserving the quality of sardine fillets.

Nanoencapsulation of EOs is currently being practiced to improve the stability and bioactivity of natural products, providing a potential solution for the challenges associated with EO application.

Encapsulation of curcumin using Grass pea (Lathyrus sativus) protein isolate/Alyssum homolocarpum seed gum complex nanoparticles

Summary: Grass pea protein isolate (GPPI)/Alyssum homolocarpum seed gum (AHSG) complex nanoparticles were used as a wall material for encapsulation of Curcumin. Two fabrication methods were compared, with Type 2 capsules showing higher encapsulation efficiency and loading capacity for Cur. The major driving forces for particle formation and Cur encapsulation were found to be hydrogen bonding, electrostatic attraction, and hydrophobic interaction. Encapsulated Cur showed improved antioxidant activity, light and thermal stability, and delayed release under in-vitro gastrointestinal conditions.
