Assessment of Concentrated Liquid Coffee Acceptance during Storage: Sensory and Physicochemical Perspective

Summary: The study found that the concentrate without additives reached the acceptance limit at 196 days, while the additives increased the shelf life to 226 days, mainly due to their ability to slow down the decrease in aroma, increase in acidity, and decrease in bitterness. Additionally, the reactions of 5CQA and 3,5diCQA were found to be related to aroma changes, while changes in fructose and stearic acid content could affect bitterness and acidity.
