Synergetic effects of Lactobacillus plantarum and Rhizopus oryzae on physicochemical, nutritional and antioxidant properties of whole-grain oats (Avena sativa L.) during solid-state fermentation

Han Wu et al.

Summary: Co-inoculation of Lactobacillus and Rhizopus oryzae showed synergetic effects on whole-oat solid state fermentation, enhancing viable bacterial cell count, macromolecule hydrolysis, water transformation, and antioxidant activity of fermented oats. Among the Lactobacillus strains tested, B1-6 displayed the best enhancement of overall quality during co-inoculated SSF.

Thermal, pasting and structural studies of oat starch-caseinate interactions

Lokesh Kumar et al.

Summary: The study found that the effects of calcium caseinate (CaCn) on oat starch were closely related to the concentration of CaCn, with higher concentrations leading to increased pasting properties, higher viscosity, and decreased stability. High levels of CaCn also affected the thermal and structural properties of oat starch.

Developing a new modification technology of oat flour based on differential pressure explosion puffing

Yifu Zhang et al.

Summary: The research developed the DPEP technology to modify oat, resulting in improved water absorption, solubility, and viscosity. However, prolonged high-temperature treatment may lead to a decrease in these properties. The modified oat showed enhanced gelatinization properties and crystal structure.

Extrusion pregelatinization improves texture, viscoelasticity and in vitro starch digestibility of mango and amaranth flours

Daniel E. Garcia-Valle et al.

Summary: The study investigated the impact of extruding pregelatinization on amaranth and mango flours, revealing significant changes in the characteristics of the flours, such as disruption of starch structure and alterations in starch digestibility. Amaranth flour, with higher protein content, demonstrated higher levels of slowly digestible starch, potentially due to its ability to form complexes with starch. Extrusion was found to have a strong effect on the properties of both flours, as indicated by principal component analysis.

Modeling the gelatinization-melting transition of the starch-water system in pulses (lentil, bean and chickpea)

C. Lefevre et al.

Summary: The study analyzed gelatinization-melting transition of lentil, bean, and chickpea starches at different temperatures and water contents. Results showed that starch conversion could be predicted, with gelatinization and melting temperatures influenced by moisture, and similar thermal behavior of starches among the three pulses.

Effects of heat-moisture treatment conditions on the physicochemical properties and digestibility of field bean starch (Vicia faba var. minor)

Malgorzata Piecyk et al.

Summary: In this study, the starch of two field bean cultivars was modified using HMT to investigate its physicochemical properties and digestibility. The HMT treatment led to changes in starch properties such as swelling power, amylose leaching, and gelatinization temperature, as well as altered digestibility. The modifications showed variation based on moisture content and temperature levels, ultimately affecting the content of resistant starch.

Physicochemical and digestive properties of A- and B-type granules isolated from wheat starch as affected by microwave-ultrasound and toughening treatment

Kangyi Zhang et al.

Summary: The study revealed that microwave-ultrasound and toughening treatment significantly altered the physicochemical properties, structure, and digestibility of A- and B-type granules isolated from wheat starch, leading to changes in resistant starch content, crystal structure, and helix content. The modified starch samples showed unique properties compared to singly modified starches.
