Analysis of porous structure of potato starch granules by low-field NMR cryoporometry and AFM

Summary: In this study, low-field NMR cryoporometry (LF-NMRC) was used to analyze the pore structure of potato starch (PS), showing superiority over traditional method low temperature nitrogen adsorption (LT-NA) in distinguishing and determining pore size distribution in the micropores region. Structural evidences from scanning electron microscope (SEM) and atomic force microscope (AFM) further confirmed LF-NMRC as a non-destructive method with accurate and reliable results for pore size distribution analysis in starch granules.
