Summary: The quality of cocoa produced by farmers varies due to microbial activities, where predominant LAB and AAB strains are found in all regions but with varying functional performances. Yeasts population shows wide genetic diversity with strains differing from region to region, leading to variable fermented cocoa quality. The microbial factors in different regions contribute to the observed variation in fermented cocoa quality.
