Improve the viability and extracellular polymeric substances bioactivity of Lactiplantibacillus plantarum VAL6 using the environmental adaptation

Summary: This study analyzed the effects of environmental challenges on the production, properties of extracellular polymeric substances (EPS), and viability after freeze-drying of Lactiplantibacillus plantarum VAL6. The results showed that these challenges stimulated EPS production and improved the strain's viability. The antioxidant properties and content of EPS played a key role in enhancing the freeze-dried viability of LAB.

Response of Lactobacillus plantarum VAL6 to challenges of pH and sodium chloride stresses

Summary: The study revealed that under pH 3 stress conditions, Lactobacillus plantarum VAL6 produced the highest exopolysaccharide yield with increased mannose and glucose, while under pH 8 stress conditions, galactose content was highest. The stress of sodium chloride also led to significant changes in the monosaccharide composition of exopolysaccharides.

This study investigated the changes in EPS production by Lactobacillus plantarum VAL6 under thermal stress and increased CO2 concentration. The EPS yield reached the highest under CO2 exposure, with altered monosaccharide composition.

Summary: This study revealed that Bacillus velezensis strain VTX20 can efficiently produce EPS with antioxidant activity under sucrose cultivation conditions. Genomic analysis identified the ls-levB operon responsible for levan-type EPS synthesis in B. velezensis for the first time. The EPS mainly consisted of levan with high water solubility and water holding capacity, showing strong antioxidant activity in vitro.
