Targeted precursor addition to increase baked flavour in a low-acrylamide potato-based matrix

Biosynthesis of pleasant aroma by enokitake (Flammulina velutipes) with a potential use in a novel tea drink

Summary: Western consumers prefer tea products with little or no green flavor, prompting the exploration of edible basidiomycetes to aromatize tea infusion. Among the twenty-nine screened fungi, enokitake was identified as an ideal species due to its appealing nutty and chocolate-like flavor, along with a rapid fermentation process. Through sensory evaluation and chemical analysis, it was found that enokitake biosynthesized unique compounds and altered the flavor profile of the tea infusion to reduce green and floral notes while enhancing nutty and chocolate-like aromas.
