Influence of enzyme source and catechins on theaflavins formation during in vitro liquid-state fermentation

Jinjie Hua et al.

Summary: The study optimized the production of TFs from catechins in vitro using different enzyme sources and addition timings. It was found that using PPO as an enzyme source and batchwise addition of catechins can improve the formation of TFs, especially with a 1:2 ratio of EGC/EGCG. This research provides insights into the mechanisms of TFs synthesis.

Purification and biochemical characterization of polyphenol oxidase of African bush mango (Irvingia gabonensis) fruit peel

Catherine Joke Adeseko et al.

Summary: This study aimed to extract, purify, and investigate the physicochemical properties of PPO from the peel of African bush mango. It found that the purified PPO had optimal conditions for activity, stability under certain temperatures and pH levels, and was inhibited by specific substances. This information could be valuable for extending the shelf life of African bush mango and enhancing its usability in food processing and technology.

Characterization of polyphenol oxidase from fennel (Foeniculum vulgare Mill.) seeds as a promising source

Yonca Yuzugullu Karakus et al.

Summary: Fennel seeds were identified as a promising source of polyphenol oxidase (PPO) and the purified PPO enzyme was characterized in detail for the first time. The enzyme showed the best activity towards the substrate catechol, suggesting potential industrial applications in producing low-cost enzymes. Inhibitors and organic solvents were found to impact PPO activity, with certain solvents maintaining the enzyme's activity at high concentrations.

Comparison of the characterization and the temperature/pressure stability of soluble and membrane-bound polyphenol oxidase from 'Lijiang' snow peach

Fuhai Wang et al.

Summary: The study found that sPPO and mPPO in 'Lijiang snow' peaches showed different activity under different conditions, with mPPO exhibiting poorer inhibitory effects from inhibitors and being more stable under the treatment conditions investigated.
