Preparation of milk protein isolate/κ-carrageenan conjugates by maillard reaction in wet-heating system and their application to stabilization of oil-in-water emulsions

Complexation of pea albumins with anionic polysaccharides and purification of PA1a

Summary: Selective complexation with anionic polysaccharides was used to purify a target protein, pea albumin 1a, from mixtures containing multiple proteins. The results showed that the system with sulfated polysaccharides had higher critical pH and protein recovery compared to the system with carboxylated polysaccharides. The highest recovery of the target protein was achieved using a carboxymethyl cellulose system, despite its lower charge density.
