Total amino acids concentration as a reliable predictor of free chlorine levels in dynamic fresh produce washing process

Summary: The study established the total amino acids concentration in wash water as an alternative indicator of free chlorine levels, and developed a model to predict FC concentration. Experimental results showed strong linear correlations between AA levels and produce-to-water ratio, as well as between chemical oxygen demand and AA concentrations. The model parameters performed well in predicting FC and AA levels in continuous wash experiments.
