Structure Design for Improving the Characteristic Attributes of Extruded Plant-Based Meat Analogues

Cuixia Sun et al.

Summary: Meat is a major protein source for humans, but livestock farming has negative environmental consequences. Plant proteins have the potential to replace meat, with the challenge being how to replicate the attributes of real animal meats in plant-based alternatives. This work focuses on structure design and extrusion technology to create plant-based meat alternatives.

Influence of extrusion process parameters on specific mechanical energy and physical properties of high-moisture meat analog

The-Thiri Maung et al.

Summary: This study investigated the effect of high-moisture extrusion process parameters on system parameters and product physical properties, finding that a combination of high moisture, high temperature, and low screw speed can reduce energy consumption and enhance texturization degree of meat analogs. The formation of layer and fibrous structure of the samples was primarily influenced by variations in feed moisture and barrel temperature.

Effect of extrusion temperature on the protein aggregation of wheat gluten with the addition of peanut oil during extrusion

Yu Chen et al.

Summary: The study found that extrusion temperature affects the protein components and aggregation of wheat gluten and wheat gluten-peanut oil complexes. Increasing extrusion temperature led to changes in protein content, extractability, and average molecular weight. Higher temperature promoted gluten aggregation through enhanced disulfide cross-linking, as well as increased SH-SS interchange.

High Moisture Extrusion of Soy Protein: Investigations on the Formation of Anisotropic Product Structure

Patrick Wittek et al.

Summary: The high moisture extrusion of plant proteins is suitable for producing protein-rich products that imitate meat. Anisotropic structures are formed by extrusion at high moisture content and elevated temperatures, and are influenced by material temperature. The mechanism behind this structure formation is still not fully understood, with ongoing discussions focusing on protein alignment or morphology development in multiphase systems.

Meat analogs: Protein restructuring during thermomechanical processing

Akashdeep Singh Beniwal et al.

Summary: The article discusses the latest understanding in food structuring science on how to use alternative or non-meat protein ingredients to create novel structured matrices that mimic the texture of real meat. It also highlights how the physicochemical and structural changes in concentrated protein systems during processing lead to fibrous or layered meat-like textures. The study emphasizes the impact of raw materials and processing parameters on the texture and overall sensory quality of meat analogs.

High-moisture extrusion process of transglutaminase-modified peanut protein: Effect of transglutaminase on the mechanics of the process forming a fibrous structure

Jinchuang Zhang et al.

Summary: This study investigated the impact of TGase-modified peanut protein in high-moisture extrusion process. It was found that TGase can improve sensory properties and promote protein unfolding, aggregating, and cross-linking, but excessive use may hinder protein rearrangement and fiber structure improvement. TGase also helps in forming new hydrogen bonds and disulfide bonds to stabilize protein conformation, and enhances the stretching of protein molecular chains, leading to the synthesis of larger protein subunits. TGase alters the main forces maintaining the fibrous structure and modifies the proportion of protein secondary structures for better quality of meat substitutes.

Rheological properties of pea protein isolate-amylose/amylopectin mixtures and the application in the high-moisture extruded meat substitutes

Qiongling Chen et al.

Summary: The study found that amylopectin could decrease the rheological properties of PPI dispersion, promote the formation of protein anisotropic structure, and enhance the fibrous degree of the extrudates. On the other hand, amylose had minimal effect on the viscosity of PPI dispersion and did not contribute to protein fibrous structure formation.

The development history and recent updates on soy protein-based meat alternatives

Tianyi Zhang et al.

Summary: The rapid growth of the world's population has led to increasing shortages in high biological value proteins, leading to the development of plant protein meat alternatives. Soy protein, with its excellent gelation properties and fibrous structures, has become the most widely known alternative to animal protein. Research on raw material composition, processing strategies, and future prospects of soy protein meat alternatives are outlined in this review.

Effect of Oil Content and Oil Addition Point on the Extrusion Processing of Wheat Gluten-Based Meat Analogues

Christina Kendler et al.

Summary: Oil addition during high-moisture extrusion of wheat gluten influences process parameters and structural characteristics, with higher oil content leading to lower material temperature, die pressure, and complex viscosity. Adding oil at the end of the extruder reduces these effects compared to adding oil in the front. The size of oil droplets in the gluten matrix increases with higher oil content, but decreases when oil is added at the end of the extruder.
