Efficacy of combinations of lactic acid and potassium sorbate against Listeria monocytogenes in chicken stored under modified atmospheres

Summary: The study found that the combination of lactic acid and potassium sorbate significantly reduced the growth rate of psychrotrophs and mesophiles on chicken legs packaged in 20% CO2/80%N-2, with the 3.75% lactic acid and 3.75% potassium sorbate combination being the most effective in reducing L. monocytogenes. Immersing chicken legs in this solution can decrease L. monocytogenes populations in fresh chicken packaged in a modified atmosphere.

Independent and combined effects of high pressure, microwave, soluble gas stabilization, modified atmosphere and vacuum packaging on microbiological and physicochemical shelf life of precooked chicken breast slices

Summary: The study aimed to extend the shelf life of precooked chicken breast slices without compromising quality using various packaging and processing technologies. The results showed that high pressure processing (HPP), with or without soluble gas stabilization (SGS), was the most efficient method for extending shelf life to more than three months. All treated chickens had similar color, texture, pH, and drip loss, with lipid oxidation increasing notably during storage. HPP and microwave volumetric heating (MVH) reduced lipid oxidation post-treatment and during storage, while SGS suppressed lipid oxidation but only for a short period.
