Impact of defatting treatment and oat varieties on structural, functional properties, and aromatic profile of oat protein

Parallel comparison of functional and physicochemical properties of common pulse proteins

Summary: This study systematically investigated the functional properties and physicochemical characteristics of protein isolates extracted from common pulses. It was found that pigeon pea protein exhibited excellent emulsification capacity and stability, while lentil protein, pea protein, and pigeon pea protein showed good water absorption abilities. Chickpea protein had a higher thermal denaturation peak temperature compared to other proteins. Commercial soybean protein isolate was found to be less functional than lab-extracted soybean protein isolate due to protein denaturation during commercial processing.
