Inhibitory effect of sugarcane (Saccharum officinarum L.) molasses extract on the formation of heterocyclic amines in deep-fried chicken wings

Summary: This study investigated the inhibitory effect of sugarcane molasses extract (SME) on the formation of hazardous compounds during deep-frying of chicken wings. The results showed that SME significantly reduced the levels of heterocyclic amines (HCAs), with a higher antioxidant activity leading to a greater inhibitory effect.

Summary: This study demonstrates that berry marinades can reduce the formation of harmful heterocyclic amines in meat during cooking. The reduction of HCAs is associated with marinade time, with longer marinating times (6 hours and above) showing more significant effects. Additionally, marinating for less than 1 hour can lead to an increase in certain HCAs.

Summary: The study investigated the effects of different brands of oven bags on the formation of HAA and migration of BPA in cooked chicken meats, finding that total HAA content ranged from 6.53 to 42.32 ng/g, with higher levels in breast meat. The use of oven bags reduced total HAA amount by 12% to 68.82%, but caused BPA migration, although the levels of HAA and BPA in all samples were not at a level to pose a risk to human health.
