Fatty acids and volatile flavor compounds in commercial plant-based burgers

Jiang He et al.

Summary: This study discovered the differences in fatty acids and volatile flavor compounds between plant-based burgers and beef burgers, mainly due to the different ingredients used. The cooking process was found to be crucial for aroma formation, while ingredients such as spices remained important sources of volatile flavor compounds in these burger samples.

Detailed characterization of plant-based burgers

Massimo De Marchi et al.

Summary: The study shows that plant-based and meat-based burgers have similar protein and saturated fat content, but plant-based burgers are richer in minerals and polyunsaturated fatty acids. The most abundant minerals in both categories are Na, K, P, S, Ca, and Mg, while plant-based burgers have four times more n-6 and greater proportion of short-chain fatty acids compared to meat-based burgers.

Methods for Testing the Quality Attributes of Plant-Based Foods: Meat- and Processed-Meat Analogs

David Julian McClements et al.

Summary: The modern food system is experiencing changes in consumption patterns driven by various factors, such as ethical, health, and environmental concerns, which are increasing the sales of meat analog foods and prompting increased research and development activities in plant-based meats. This review describes methods employed by scientists to analyze and characterize the properties of meat alternatives, proposing standardized methods for future use. Methods for determining the properties of plant-based meat, such as composition, microstructure, texture, water-holding capacity, cooking resilience, and sensory attributes, are discussed to guide further studies and method selection.

The gastrointestinal fate of inorganic and organic nanoparticles in vitamin D-fortified plant-based milks

Hualu Zhou et al.

Summary: Both organic and inorganic nanoparticles, such as nanocellulose, nanoemulsion, and titanium dioxide (TiO2) particles, are commonly added to food and beverage products to alter their quality attributes. In this study, the impact of these nanoparticles on macronutrient digestion and vitamin bioavailability was investigated using vitamin D-fortified plant-based milks as model food products. The results showed that while TiO2 nanoparticles were effective at increasing whiteness, nanocellulose particles were effective at increasing shear viscosity in the fortified milks. The behavior of the nanoparticles in the gastrointestinal tract was analyzed, showing that they were well dispersed due to protein adsorption and mechanical action of gut fluids.

In Vitro Gastrointestinal Stability of Lipophilic Polyphenols is Dependent on their Oil-Water Partitioning in Emulsions: Studies on Curcumin, Resveratrol, and Quercetin

Hualu Zhou et al.

Summary: The bioavailability of lipophilic polyphenols is often hindered by poor solubility and stability in the human gut. Encapsulating these polyphenols within digestible lipid droplets can enhance their solubility and stability. Different polyphenols, such as quercetin, curcumin, and resveratrol, exhibit varying levels of chemical stability and solubility under simulated gastrointestinal conditions, which can be attributed to factors like pH-dependent charge and logD values. Understanding these factors is crucial for designing nanoemulsion-based delivery systems to improve the efficacy of lipophilic polyphenols.

The development history and recent updates on soy protein-based meat alternatives

Tianyi Zhang et al.

Summary: The rapid growth of the world's population has led to increasing shortages in high biological value proteins, leading to the development of plant protein meat alternatives. Soy protein, with its excellent gelation properties and fibrous structures, has become the most widely known alternative to animal protein. Research on raw material composition, processing strategies, and future prospects of soy protein meat alternatives are outlined in this review.

A Novel Approach for Tuning the Physicochemical, Textural, and Sensory Characteristics of Plant-Based Meat Analogs with Different Levels of Methylcellulose Concentration

Allah Bakhsh et al.

Summary: This study evaluated the effects of different concentrations of Methylcellulose on plant-based meat analog patties, finding differences in moisture, protein, fiber content, pH values, and texture characteristics among the control and PBMA patties. The addition of MC tended to reduce lightness and redness values after cooking, while water holding capacity decreased with increasing MC concentration. Control patties showed higher hardness, chewiness, and gumminess compared to C-TVP and T-ISP patties. Sensory analysis revealed that C-TVP patties with 3% MC had superior sensory properties.

Functionality of Ingredients and Additives in Plant-Based Meat Analogues

Konstantina Kyriakopoulou et al.

Summary: Meat analogue research focuses on producing sustainable products that mimic the physical sensations and nutritional aspects of conventional meat. The common practice involves mixing different plant materials to enhance functionality, with a growing interest in using ingredients like flours for improved functionality specifically in meat analogues. Another trend is the exploration of novel protein sources such as seaweed, algae, and proteins produced via fermentation.
