Direct quantification of red wine phenolics using fluorescence spectroscopy with chemometrics

Summary: Fluorescence spectroscopy combined with chemometrics was successfully used to directly quantify phenolic content in red wine and fermenting samples. Predictive models for total phenols, total condensed tannins and total anthocyanins were built using machine learning algorithms, showing good classification ability for South African red wine cultivars. This approach could be a useful tool for authentication and quality control by regulatory bodies.

Summary: The study used FCS to investigate the interaction between wine macromolecules and BSA, showing changes in protein conformation and complex formation with the addition of wine macromolecules. Different fractions in wine had varied effects on aggregation, with polysaccharides preventing protein-tannin complex precipitation. The application of FCS in real wines demonstrated live monitoring of heat-induced aggregation to study protein haze formation.
