Improvement of stability and bioaccessibility of β-carotene by curcumin in pea protein isolate-based complexes-stabilized emulsions: Effect of protein complexation by pectin and small molecular surfactants

Qing Guo et al.

Summary: A study found that emulsions stabilized by the high methoxyl pectin-rhamnolipid-pea protein isolate-curcumin complex had the best performance in terms of droplet size, encapsulation efficiency, physical stability, and bioaccessibility of beta-carotene.

Co-encapsulation of curcumin and β-carotene in Pickering emulsions stabilized by complex nanoparticles: Effects of microfluidization and thermal treatment

Yang Wei et al.

Summary: The study demonstrated that suitable parameters for stable beta-carotene loaded Pickering emulsions were a particle concentration of 2.0%, an operating pressure of 100 MPa, and a heating temperature of 60 degrees Celsius. Co-encapsulation showed a synergistic effect on improving the photothermal stability of beta-carotene and curcumin, but higher particle concentrations and heating temperatures may decrease bioaccessibility.

Enhancing the stabilization of β-carotene emulsion using ovalbumin-dextran conjugates as emulsifier

Jun Sun et al.

Summary: Covalent binding with a polysaccharide is a simple and reliable way to improve the emulsifying behaviour of a protein. The modified OVA by Dex under different heating conditions had significant effects on the stability and digestion of emulsions. OVA-Dex-MH conjugates showed better stability and higher encapsulation rate of beta-carotene in emulsions, making them potential for stable emulsion-based delivery systems.

Methods for Testing the Quality Attributes of Plant-Based Foods: Meat- and Processed-Meat Analogs

David Julian McClements et al.

Summary: The modern food system is experiencing changes in consumption patterns driven by various factors, such as ethical, health, and environmental concerns, which are increasing the sales of meat analog foods and prompting increased research and development activities in plant-based meats. This review describes methods employed by scientists to analyze and characterize the properties of meat alternatives, proposing standardized methods for future use. Methods for determining the properties of plant-based meat, such as composition, microstructure, texture, water-holding capacity, cooking resilience, and sensory attributes, are discussed to guide further studies and method selection.

Keratin-Chitosan Microcapsules via Membrane Emulsification and Interfacial Complexation

Amy Wilson et al.

Summary: This study reports the continuous fabrication of stable microcapsules using renewable, biodegradable biopolymer wall materials keratin and chitosan via membrane emulsification for the first time. The microcapsules, with a core-shell structure formed through interfacial complexation of keratin and chitosan, showed enhanced stability and release efficiency, potentially for applications in skin pH formulas for oil protection.

Effect of oil type and β-carotene incorporation on the properties of gelatin nanoparticle-stabilized pickering emulsions

Huan Tan et al.

Summary: The study investigated the microstructure and physicochemical properties of Pickering emulsions stabilized by gelatin nanoparticles with different oil types and concentrations, using confocal laser scanning microscopy. Increasing nanoparticle concentration led to thicker adsorption layers and more droplets, while increasing oil fraction improved emulsion stability and oxidation resistance. Corn oil emulsions were less stable due to high interfacial tension and long-chain fatty acids, compared to MCT oil emulsions.
