Combating biofilms of foodborne pathogens with bacteriocins by lactic acid bacteria in the food industry

Transcriptome analysis reveals the molecular mechanisms of the novel Lactobacillus pentosus pentocin against Bacillus cereus

Summary: This study investigated the antibacterial effect and mechanism of Lactobacillus pentosus pentocin against Bacillus cereus, revealing that pentocin had strong antibacterial activity by targeting cytomembrane destruction, biofilms formation, DNA replication, and protein synthesis of B. cereus. Multiple analytical techniques confirmed cytomembrane damage and the down-regulation of genes related to spores and biofilms formation in B. cereus, as well as the interference with DNA replication and protein synthesis pathways. The findings suggest that pentocin could be a promising natural preservative for controlling B. cereus contaminations in foods.
