Pickering Emulsions via Interfacial Nanoparticle Complexation of Oppositely Charged Nanopolysaccharides

Siqi Huan et al.

Summary: By studying variables related to the adsorption of renewable nanoparticles and stabilization of multiphase systems, we prepared CNF/NCh aqueous suspensions using oppositely charged nanopolysaccharides and created sunflower oil-in-water Pickering emulsions with adjustable droplet diameters. The adsorption of CNF/NCh complexes at the oil/water interface led to highly stable emulsions with long-term stability against creaming and oiling-off, showcasing potential for foodstuff, pharmaceutical, and cosmetic formulations.

Preparation of high thermal stability gelatin emulsion and its application in 3D printing

Jie Du et al.

Summary: Gelatin crosslinked by Transglutaminase was used to stabilize food-grade high internal phase emulsions (HIPEs) in a one-step method, resulting in uniform droplet diameter and good storage stability. The thermal and rheological properties of the HIPEs were enhanced with TG crosslinking, showing potential for 3D printing applications. This study provides an industrialized method for gelatin-based HIPEs with high thermal stability and theoretical guidance for practical applications.

Tunable high internal phase emulsions (HIPEs) formulated using lactoferrin-gum Arabic complexes

Ce Cheng et al.

Summary: The study investigated the ability of LF/GA complexes as emulsifiers to form and stabilize HIPEs, with properties that could be tuned by varying solution pH. The HIPEs showed good stability and environmental stability, with potential for improving the photostability of encapsulated bioactives. The research provides a useful approach for designing HIPEs with improved functional performance, which can be used in semi-solid foods for enhancing textural characteristics or nutritional profiles.

Pickering Emulsions Simultaneously Stabilized by Starch Nanocrystals and Zein Nanoparticles: Fabrication, Characterization, and Application

Shengnan Tao et al.

Summary: This study introduces an all-natural Pickering emulsion stabilized by starch nanocrystals and zein protein nanoparticles, demonstrating the significant impact of electrostatic interactions between the two types of particles on emulsion stability. The formation of particle bilayers at the interface enhances stability and enables effective transport of beta-carotene in the emulsion.
