Metabolic flux sampling predicts strain-dependent differences related to aroma production among commercial wine yeasts

Summary: Metabolomics and genome-scale metabolic modeling approaches were employed to analyze strain-specific differences in yeast metabolism during winemaking. Results showed that commercial wine yeast strains produced variable amounts of key volatile organic compounds, with differences in predicted intracellular metabolic states observed through statistical methods and experimental flux data. Constraint-based modeling using the latest genome-scale metabolic model of yeast revealed key reactions and pathways leading to strain-specific variation in VOC production, providing insights for selecting optimal aroma-producing yeast stains for alcoholic fermentations.
