Bioinspired Crowding Inhibits Explosive Ice Growth n Antifreeze Protein Solutions

Summary: This study found that crowded solutions mimicking an extracellular matrix (ECM) where AF(G)Ps are located can completely inhibit explosive ice growth. These crowded solutions consist of polyethylene glycol (PEG) and sodium citrate (SC) and possess unique nanoscale network and strong hydrogen bond (HB) forming ability, different from single component crowded solutions made of PEG or SC.
