Effects of flexibility and surface hydrophobicity on emulsifying properties: Ultrasound-treated soybean protein isolate

Shizhang Yan et al.

Summary: The study investigated the effects of ultrasound treatment on the flexibility, structure, and emulsification properties of soybean protein isolate (SPI). It was found that SPI exhibited optimal emulsification performance at 400 W ultrasound power, with a significant correlation between flexibility and emulsification performance. These findings suggest that the conformational flexibility of SPI, rather than its surface hydrophobicity, plays a key role in determining its emulsification properties.

Ultrasound modified polysaccharides: A review of structure, physicochemical properties, biological activities and food applications

Rongbin Cui et al.

Summary: Polysaccharides are essential macromolecules widely present in biological organisms, with ultrasound processing showing potential to improve their functionalities in food applications. Ultrasound-assisted extraction can increase yield and reduce extraction time, while also altering the structure and properties of polysaccharides. The effects of ultrasound frequency, intensity, processing time, solvent temperature, and polysaccharide source and composition play a role in these changes.

Effects of dynamic high-pressure microfluidization treatment on the functional and structural properties of potato protein isolate and its complex with chitosan

Chun Hu et al.

Summary: Moderate DHPM treatment can improve the functional properties of PPI and enhance them further through CS addition. DHPM treatment disrupts the molecular structure of PPI, while the addition of CS provides a protective mechanism. The structure of the CS/PPI complex can be disrupted by DHPM treatment.

Design and characterization of double-cross-linked emulsion gels using mixed biopolymers: Zein and sodium alginate

Jun Yan et al.

Summary: The study formed a double-cross-linked emulsion gel using zein and sodium alginate as gelling agents, and compared the effects of single/double cross-linked emulsion gels on the photostability and bioaccessibility of co-loaded polyphenols. The results showed that the concentration of SA and TG activity had an impact on the stability and rheology of the emulsion gels.

Improving freeze-thaw stability of soy protein isolate-glucosamine emulsion by transglutaminase glycosylation

Anqi Zhang et al.

Summary: This study investigates the enhancement of freeze-thaw stability of emulsions by incorporating glucosamine into soy protein isolate using transglutaminase. The glycosylation reaction was confirmed, and the results showed that SPI-G emulsion had larger particle size and reduced oil droplet aggregation after freeze-thaw cycles compared to SPI emulsion.

Exploiting the robust network structure of zein/low-acyl gellan gum nanocomplexes to create Pickering emulsion gels with favorable properties

Yang Jiang et al.

Summary: By adjusting the concentration of GG, the wettability of ZGPs can be manipulated, leading to the production of stable ZGPEs with robust colloidal properties. These ZGPEs exhibit distinct advantages over other zein-polysaccharide-based Pickering emulsions, providing insight into fabricating food-grade emulsions with favorable characteristics for various applications.

Interfacial dilatational and emulsifying properties of ultrasound-treated pea protein

Lei Sha et al.

Summary: High-intensity ultrasound treatment significantly improved the solubility, hydrophobicity, and particle size of pea protein isolate, leading to enhanced protein adsorption at the oil-water interface and improved emulsifying properties. The multilayer structure formed by PPIUS contributed to the physical stability of emulsions, making them less susceptible to lipid oxidation during storage compared to control protein.
