Structural and functional modification of food proteins by high power ultrasound and its application in meat processing

Summary: High power ultrasound (HPUS) is recognized as a green, physical and non-thermal technology in improving the safety and quality of foods by modifying the structure and functional properties of food proteins. HPUS treatment significantly affects the conformation and structure of proteins, leading to improvements in solubility, interfacial properties, viscosity, gelation, and flavor binding properties. In meat processing, HPUS can modify the structure of myofibrillar protein (MP) to enhance quality, develop low fat and/or salt products, and extend shelf life.

The effect of fatty acid chain length and saturation on the emulsification properties of pork myofibrillar proteins

Summary: This study investigated the effects of chain length and saturation of fatty acids on the emulsification properties of pork myofibrillar protein. Results showed that fat with higher contents of neutral fatty acids, long-chain fatty acids, and polyunsaturated fatty acids contributed to the stability of the emulsion system. Conversely, medium chain fatty acids, monounsaturated fatty acids, and saturated fatty acids were not conducive to emulsion stability.
