Designing Next-Generation Functional Food and Beverages: Combining Nonthermal Processing Technologies and Postharvest Abiotic Stresses

Summary: Consumers are increasingly demanding healthier, fresher, safer, and longer-lasting foods. Traditional food processing technologies lead to changes in sensory properties and loss of health-promoting compounds, but novel technologies like postharvest abiotic stresses and nonthermal processing technologies have been developed to address these issues. These new technologies can extend the shelf-life of foods without using high temperatures, maintaining sensory, nutritional, and nutraceutical quality.

Enrichment of dark chocolate with vitamin D3(free or liposome) and assessment quality parameters

Summary: Liposomes prepared using ethanol injection method containing vitamin D(3) were successfully added to dark chocolate with high loading efficiency and release following the Korsmeyer-Peppas model. The fortified chocolate showed no significant changes in properties compared to the control, and liposomes helped in the retention of vitamin D(3).

Physicochemical properties and sensory acceptability of sugar-free dark chocolate formulations added with probiotics

Summary: The study aimed to investigate the synergistic effect of selected probiotic lactic acid bacteria (LAB) and essential oils on the bio-preservation of chocolate mousse food emulsion. The results showed that combining probiotic LAB and essential oils provided better bio-preservation results than using them alone, suggesting a synergistic effect between the two agents. Additionally, the chocolate mousse emulsions can be considered as functional foods and an effective vehicle for delivering probiotics to consumers.
