Conceptualising value chain research to integrate multiple food system elements

A. K. Farmery et al.

Summary: Value chains are important pathways in food systems and can address social, economic, and environmental outcomes in addition to food security and nutrition. Research on value chains has primarily focused on social and economic dimensions, with limited incorporation of environmental dimensions. While current approaches are useful for analyzing problems within food systems, there is a missed opportunity for more integrated analyses, particularly in terms of sustainability.

Individual US diets show wide variation in water scarcity footprints

Martin C. Heller et al.

Summary: The environmental impacts of water use on food production sustainability are significant. A study estimated the water impacts of self-selected diets in the United States, suggesting that food substitutions could reduce these impacts. Water scarcity in diet composition varies greatly among individuals, with meat, fruit, nuts, and vegetables playing a major role in driving these differences.
