Influence of fermentation temperature and yeast type on the chemical and sensory profile of handcrafted beers

Cristina Lasanta et al.

Summary: The study found that at lower fermentation temperatures, the yeast strain factor had a smaller impact on physicochemical parameters. As the fermentation temperature decreased, the polyphenolic content increased, with significantly higher levels of tyrosol found in samples fermented at 12 degrees C. However, beers fermented at 18 degrees C had higher volatile content and were better evaluated from a sensory perspective.

Alcoholic and Non-Alcoholic Beer Modulate Plasma and Macrophage microRNAs Differently in a Pilot Intervention in Humans with Cardiovascular Risk

Lidia Daimiel et al.

Summary: This pilot study found that the consumption of beer and non-alcoholic beer can differently modulate the levels of cardiometabolic microRNAs in plasma and macrophages, with microRNAs related to inflammation showing opposite trends after beer consumption compared to non-alcoholic beer consumption.

Xanthohumol suppresses inflammation in chondrocytes and ameliorates osteoarthritis in mice

Ximiao Chen et al.

Summary: The research found that Xanthohumol (XN) can inhibit the expression of nitric oxide synthase (INOS), IL-1 beta-promoted inducible nitric oxide (NO), tumor necrosis factor-alpha (TNF-alpha), interleukin-6 (IL-6), and cyclooxygenase-2 (COX-2) in vitro. Additionally, it down-regulates matrix metalloproteinase-13 and prothrombin, while up-regulating type II collagen and Aggrecan expression. XN also activates nuclear factor (Nrf2) and inhibits nuclear factor B (NF-kappaB) signal transduction to slow down the progression of osteoarthritis.
