Anti-aging effect of Lactobacillus plantarum HFY09-fermented soymilk on D-galactose-induced oxidative aging in mice through modulation of the Nrf2 signaling pathway

Summary: The fermented soy milk by L. plantarum HFY09 showed reduced bound soybean isoflavones content but increased free soybean isoflavones and peptides. In vivo results indicated that it increased antioxidant enzyme levels in serum, liver, and brain tissues, as well as regulated collagen and hyaluronic acid levels in skin. Furthermore, the fermented soy milk alleviated aging in D-galactose-induced mice by activating the Nrf2 signaling pathway.
