Factors affecting the capsaicinoid profile of hot peppers and biological activity of their non-pungent analogs (Capsinoids) present in sweet peppers

Summary: Capsaicinoids, as acid amides of C-9-C-11 branched-chain fatty acids and vanillylamine, along with their non-pungent analogs, capsinoids, are important chemical compounds in Capsicum annuum with various health benefits. Factors such as light intensity, heat treatments, environment, genotype, node position, and fruits maturity stage can affect capsaicinoid content and pungency in peppers. Future research should focus on understanding changes in capsinoids during pre and post-harvest management, as well as exploring genetically modified sweet peppers with functional pAMT for specific pungency levels.

Effects of yellow and red bell pepper (paprika) extracts on pathogenic microorganisms, cancerous cells and inhibition of survivin

Summary: The study investigated the biomedical value of red and yellow bell pepper extracts in terms of antioxidant, antibacterial, and anticancer activities through in vitro and virtual studies. The results showed that RME had higher levels of total phenols and total flavonoids, exhibited stronger antibacterial activity, and induced cellular damage in B. cereus biofilm. Additionally, RME demonstrated higher cytotoxicity in human lung cancer cells and potential compounds with higher docking energy against specific enzymes and proteins.

Preservation of sweet pepper purees: effect on chemical, bioactive and microbial quality

Summary: This study investigated the effects of storage on purees made from three different varieties of sweet peppers, analyzing their chemical, bioactive, and microbiological qualities. Results showed that red puree retained the highest amount of bioactive compounds, while green puree had a higher NEB index. Overall, the study suggests that the shelf life of sweet peppers can be extended through the use of purees with maximum retention of bioactive compounds.
