Summary: This study aimed to evaluate the bioaccessible phenolic compounds in tomato and husk tomato during upper gastrointestinal digestion, as well as the production of short-chain fatty acids from indigestible fractions through in vitro fermentation. It was found that vanillic acid was the most bioaccessible phenolic compound, and 3-hydroxyphenylacetic acid was the most abundant microbial metabolite after 48 hours in both samples. Additionally, microbial metabolism of carotenoids may contribute to the presence of terpenes and their derivatives in tomato and husk tomato.
