QSAR-based physicochemical properties of isothiocyanate antimicrobials against gram-negative and gram-positive bacteria

Silvia Andini et al.

Summary: ITCs derived from Brassicaceae are potential food preservatives due to their antimicrobial activity, which is influenced by their subclass and side chain. A QSAR study was conducted on 26 ITCs, showing that physicochemical properties such as partial charge, polarity, reactivity, and shape are key factors influencing their antibacterial activity. Extracts from Sinapis alba, Brassica napus, B. juncea, B. oleracea, and Camelina sativa, rich in ITCs, also demonstrated promising antibacterial activity. The QSAR models developed in this study can predict the antibacterial activity of new ITCs and ITC-rich mixtures, making Brassicaceae ITC-rich extracts a potential natural food preservative.
