Mesona chinensis polysaccharides promote molecular crosslinking and gel formation of debranched waxy maize starch

Effect of whey protein isolate on the stability and antioxidant capacity of blueberry anthocyanins: A mechanistic and in vitro simulation study

Summary: The study found that whey protein isolate (WPI) can enhance the stability and antioxidant activity of blueberry anthocyanins (ANs), particularly at a concentration of 0.15 mgmL(-1), by stabilizing them through hydrophobic forces. It was also revealed that the structure of WPI changes when it binds non-covalently to the major anthocyanin monomer malvidin-3-O-galactoside (M3G), resulting in fewer alpha-helices and more beta-sheets being formed. Moreover, molecular docking studies showed that WPI, especially immunoglobulin (IgG), plays a significant role in stabilizing ANs through hydrogen bonds and hydrophobic forces.

Rheological, thermal and in vitro digestibility properties on complex of plasma modified Tartary buckwheat starches with quercetin

Summary: The study investigated the rheological, thermal properties, and digestibility of plasma-modified Tartary buckwheat starch complexed with quercetin. The results showed that quercetin increased the consistency coefficient and decreased the flow behavior index of the complex. SEM and TGA analysis revealed a more compact and stable structure after quercetin complexation, while XRD and FT-IR results indicated a non-inclusive complex with higher crystallinity formed through hydrogen bonding between quercetin and starch. Additionally, the digestion rate of the complex decreased compared to untreated Tartary buckwheat starch, attributed to increased viscosity, enhanced crystallinity, and compactness of starch granules.
