An integrated approach to reveal the chemical changes of Ligustri Lucidi Fructus during wine steaming processing

Summary: A research strategy was proposed to reveal the chemical changes during wine steaming processing of Ligustri Lucidi Fructus. It was found that iridoid and phenylethanoid esters were readily hydrolyzed during this processing, while organic acids, flavonoids, and triterpenes remained stable. This study indicated a potential method to investigate chemical changes in herbs during processing.
