Physical properties and stability of quercetin loaded niosomes: Stabilizing effects of phytosterol and polyethylene glycol in orange juice model

Summary: In this study, quercetin-loaded niosomes were successfully prepared and their stability and antioxidant properties in orange juice were evaluated. The optimal formulation containing specific ratios of phytosteml, surfactants, and PEG400 showed the highest encapsulation efficiency and stability. The niosomes stabilized with phytosterol demonstrated enhanced encapsulation stability during storage and pasteurization.

The study presented in this research indicates a putative therapeutic potential of nanoparticles under study based on evaluation of their effect on cell proliferation and apoptosis.
