Novel browning alleviation technology for fresh-cut products: Preservation effect of the combination of Sonchus oleraceus L. extract and ultrasound in fresh-cut potatoes

In this study, metabolomics analysis revealed that xanthosine and p-coumaric acid exhibited significant anti-browning effects on potato mash and slices. Additionally, xanthosine was found to reduce the activities of polyphenol oxidase and peroxidase, thus preventing the development of brown products.
