Residue changes and processing factors of eighteen field-applied pesticides during the production of Chinese Baijiu from rice

Steeping and steaming were found to reduce pesticide residues significantly, while distillation was the most effective in removing remaining residues. Rapid analysis of Baijiu volatile compounds fingerprint for their aroma and regional origin authenticity assessment

Summary: Solid-phase microextraction-mass spectrometry (SPME-MS) and fast gas chromatography based electronic nose (GC-E-Nose) were compared for their ability to distinguish Baijiu of various aroma types and geographical origin. It was found that the SPME-MS method had better fitness and prediction ability compared with the GC-E-Nose method in classifying aroma and regional origins of the Baijiu samples.

Biodegradation of cyanide with Saccharomyces cerevisiae in Baijiu fermentation

Summary: This study identified Saccharomyces cerevisiae as a microbe capable of degrading cyanide in Baijiu fermentation and isolated an indigenous strain with cyanide-degrading ability. The isolated strain demonstrated effective cyanide degradation in vitro experiments, with optimal temperature and pH conditions of 30°C and pH 8.0. Moreover, the cyanide degradation capacity of the strain increased with higher cyanide concentrations, showing potential as an effective strategy for reducing cyanide content in food fermentation.
