Summary: This study provides the first integrated investigation of pepsin-digested gliadin peptides (p-gliadin) and their functional behavior in Caco-2 cell line. Results show that p-gliadin forms soluble supramolecular structures and triggers the up-regulation of genes involved in immune cell recruitment in the Caco-2 cell line.
