Quantitative N-glycoproteomic analyses provide insights into the effects of thermal processes on egg white functional properties

Summary: The study revealed that spray-drying and pasteurization treatments result in different functional properties of egg white, with spray-drying increasing surface hydrophobicity and zeta potential, and pasteurization causing disintegration of protein aggregates and altering gel structure. Quantitative N-glycoproteomic analysis showed reduced abundance of N-glycosites in SD-EW compared to F-EW, suggesting potential covalent cross-linking of N-glycans during spray-drying.

Lysosomal dysfunction in osteoarthritis and aged cartilage triggers apoptosis in chondrocytes through BAX mediated release of Cytochrome c

Summary: Lysosomal dysfunction in aged and OA cartilage leads to chondrocyte apoptosis, increased oxidative stress, and accumulation of dysfunctional mitochondria. Inhibiting lysosomal function results in BAX-mediated mitochondrial damage and release of Cytochrome c, inducing apoptosis in chondrocytes. Restoring lysosomal function and inhibiting BAX may be a potential therapeutic approach for OA.
