Refractance window drying: A cohort review on quality characteristics

Summary: RWTM drying has the potential to minimize changes in the quality properties of food by using circulating hot water to bring thermal energy to the material to be dried. It restricts the temperature of the drying material surface to 70-85°C, allowing for high retention of material quality and heat sensitive nutritional compounds in the final dried product. Compared to other drying processes, RWTM drying offers advantages in terms of retaining heat labile compounds, quality parameters, and energy efficiency with reduced operating costs.
