Continuous microwave drying of germinated brown rice: Effects of drying conditions on fissure and color, and modeling of moisture content and stress inside kernel

Summary: The study demonstrated that in a continuous microwave dryer, the temperature and moisture content of the finally dried GBR were uniform, with most kernels having mild to moderate fissures and a significant increase in the golden yellow color index. Appropriate microwave drying conditions can promote the formation of suitable fissures and golden yellow color appearance for GBR.
