Reduction of green off-flavor compounds: Comparison of key odorants during fermentation of soy drink with Lycoperdon pyriforme

Summary: Fermentation of soy drink with Lycoperdon pyriforme significantly reduced green off-flavors and improved aroma profiles, while nutritional parameters remained consistent. Odorants such as hexanal, (E)-2-nonenal, and (E,E)-2,4-decadienal were decreased, with hexanal even falling below its odor threshold, correlating with improved sensory perception.

Summary: This study investigated the effects of starters on the physicochemical and sensory properties of terasi. Starters were found to increase protein content, reduce fermentation time, increase glutamic acid levels, and enhance the overall preference for terasi among panelists. The addition of starters (L. plantarum SB7 and B. amyloliquefaciens BC9) improved the quality of terasi.
