Optimizing the extraction of phenolic antioxidants from chestnut shells by subcritical water extraction using response surface methodology

Diana Pinto et al.

Summary: This study evaluated the optimal Subcritical Water Extraction conditions for antioxidants and polyphenols from chestnut shells using Response Surface Methodology. The results showed that the best extraction conditions were 30 min/220 degrees C, with excellent scavenging efficiencies against various radicals and no toxicity on intestinal cells.

The effects of reaction parameters on the nonenzymatic browning reaction between L-ascorbic acid and glycine

Yan Yang et al.

Summary: The non-enzymatic browning reaction between L-ascorbic acid and glycine was investigated, with pH found to have a significant impact on the reaction. An acidic environment was shown to facilitate the generation of uncolored intermediate products, while not remarkably promoting the formation of browning products.

Potential of 1H NMR fingerprinting and a model system approach to study non-enzymatic browning in shelf-stable orange juice during storage

Huong T. T. Pham et al.

Summary: For the first time, a model system approach was combined with H-1 NMR fingerprinting to study non-enzymatic browning in pasteurized shelf-stable orange juice during storage. The model systems displayed a three-phase browning development, with the degradation of ascorbic acid and reactions of sugars and amino acids playing key roles in the process. The application of H-1 NMR on simple and complex model systems revealed the degradation pathways and main reactions leading to differences in samples throughout storage. Further advanced NMR experiments may be needed to identify unknown compounds in NEB reactions.

Thermal treatment of apple puree under oxygen-free condition: Effect on phenolic compounds, ascorbic acid, antioxidant activities, color, and enzyme activities

Ah-Na Kim et al.

Summary: The study found that heating in the absence of oxygen can effectively maintain the color, antioxidant activity, phenolic compounds, and ascorbic acid of apple puree, while heating with oxygen leads to considerable browning and degradation of these components. Thermal processing without oxygen can help preserve the nutritional value of fruits and vegetables.

Subcritical water as hydrolytic medium to recover and fractionate the protein fraction and phenolic compounds from craft brewer's spent grain

P. Alonso-Riano et al.

Summary: The study explored the valorization of brewer's spent grain through subcritical water hydrolysis, revealing the highest protein solubilization rate at 185 degrees C, the highest free amino acid content at 160 degrees C, and the maximum total phenolic compounds at 185 degrees C. This research provides insights into the fractionation of bioactive compounds and the integration of small breweries into the biorefinery concept.
