Summary: Enzymatic browning is the main quality issue of fresh-cut potato. In this study, metabolomics analysis revealed that xanthosine and p-coumaric acid exhibited significant anti-browning effects on potato mash and slices. Additionally, xanthosine was found to reduce the activities of polyphenol oxidase and peroxidase, thus preventing the development of brown products.
