Particle degradation and nutrient bioavailability of soybean milk during in vitro digestion

Summary: This study investigates the impact of different particle sizes of soybean flour on the structural breakdown and nutrient release during in vitro digestion of soybean milk. The results show that the particle size affects the release of various compounds, with the 50-100 mesh particle size showing the highest release of phenolic compounds, small molecule proteins/peptides, and fatty acids. Additionally, this particle size also displays the highest bioaccessibility of bioactive substances such as polyphenols and flavonoids.
