A new approach for modelling and optimizing batch enzymatic proteolysis

Summary: This manuscript introduces an original approach for modeling and optimizing batch enzymatic proteolysis, integrating enzymatic cost and reaction duration using a hybrid method of kinetic models and design of experiments. Through successful validation with Alcalase 2.4L and other proteases, the methodology offers an attractive tool for industrial applications to reduce reaction costs and improve efficiency in producing hydrolysates.
