This paper reviews recent advances related to membrane fouling in juice processing, focusing on the characteristics of membrane fouling, factors affecting membrane fouling, and techniques used to mitigate membrane fouling. Future trends and challenges for technology development to address membrane fouling in juice processing are also discussed.
Pressure-driven membrane filtration is an essential part in the juice industry as a tool for clarification and concentration due to its low-temperature treatment, high selectivity, and lower energy consumption. However, membrane fouling compromises these benefits as fouling significantly reduces the membrane performance and durability, hence increasing the operating and maintenance costs. This paper reviews the recent advances related to membrane fouling in juice processing in the light of the growing interest towards sustainable processes characterized by high economic viability and low environmental impact. This review focuses on the characteristics of membrane fouling, factors affecting membrane fouling, and techniques used to mitigate membrane fouling. Future trends and challenges for the technology development to address membrane fouling in juice processing are also discussed.
