The Food Poisoning Toxins of Bacillus cereus

Richard Dietrich et al.

Summary: Bacillus cereus is a soil bacterium responsible for two types of food-related gastrointestinal diseases: food intoxication and food infections. The diseases are caused by various toxins produced by the bacterium, including cereulide and proteinaceous enterotoxins. The review covers the distribution, genetic organization, regulation, and secretion mechanisms of these toxins, with a focus on Hbl and Nhe enterotoxin complexes.

The role of phenolic compounds against Listeria monocytogenes in food. A review

Sol Zamuz et al.

Summary: Polyphenols, especially phenolic acids and flavonoids, play a central role in inhibiting L. monocytogenes and its ability to form biofilms, leading to food outbreaks. The inhibitory effect of polyphenols is influenced by the composition of the extract, the food matrix, and processing and storage conditions. Studies have shown that polyphenols can act as food preservatives against L. monocytogenes in various food products, particularly meat and meat products, under different storage conditions.

Burden of foodborne diseases: think global, act local

Sara M. Pires et al.

Summary: National burden of foodborne disease studies are crucial for establishing food safety as a public health priority, ranking diseases, and informing interventions. Despite progress in implementing these studies, the current landscape of disease burden remains disjointed, making it challenging for researchers to translate findings into policy recommendations.
